Secure a licensed premises (licencia de actividad/ambiental) from the Ayuntamiento before installing roasters; confirm chimney specs, noise limits, and waste handling. Implement a HACCP plan and register the facility in the RGSEAA if you roast, pack, or store coffee; expect inspections by Sanidad. For imports, get an EORI, align Incoterms with your broker, and ensure CN 0901 documentation (invoice, packing list, phytosanitary where required); validate supplier traceability and ochratoxin A controls. Label retail packs to EU 1169/2011: legal name, net weight, lot, best-before, business operator, storage, origin if claimed; add grinding/roast date only if consistent. Join an EPR scheme (Ecoembes) for packaging, and register as a waste producer with a gestor for chaff/packaging. Protect the brand at OEPM or EUIPO, draft HORECA and distributor terms, and arrange product liability insurance.
