To open a coffee shop in Denmark, there is no single “coffee shop license”; you must complete a set of registrations and permits before trading. First, create a legal entity at virk.dk to obtain a CVR number (sole proprietorship/enkeltmandsvirksomhed for low risk and fast setup, or ApS if you need limited liability), then register for VAT (moms) if expected turnover exceeds DKK 50,000. Register the food business with the Danish Veterinary and Food Administration (Fødevarestyrelsen) at least 14 days before opening, submit your HACCP-based self-monitoring plan, and prepare for the Smiley inspection. Ensure a manager holds the mandatory food hygiene course (hygiejnekursus), label allergens per EU FIC, and implement documented cleaning, temperature control, pest control, and traceability. Secure municipal approvals: change-of-use/building permit if converting premises, ventilation and grease trap if producing hot food, sidewalk seating permit for outdoor tables, and fire safety clearance if capacity triggers it. If serving alcohol, apply to the municipal licensing board (Bevillingsnævnet); for coffee-only, no alcohol license is needed. Register as an employer (eIndkomst), set up waste-sorting and an approved waste contract, obtain Koda/Gramex for background music, and complete APV. Note Denmark’s cash rules: accept cash 6–22 and avoid consumer cash payments above DKK 20,000.
